  • oat bran or uncooked rolled oats
  • all-purpose flour - 1 c
  • baking powder - 2 tsp
  • baking soda - 1/2 tsp
  • buttermilk - 1/2 c
  • 1 medium ripe banana, mashed - 1/2 c
  • whole egg or 2 egg whites - 1 item
  • brown sugar, packed - 1/2 c
  • cinnamon - 2 tsp
  • ground nutmeg - 1/2 tsp
  • vegetable oil - 1/2 c
  • chopped dates - 1 c

How to make banana bran muffins:

In a large bowl, combine the oats, flour, brown sugar, baking powder, cinnamon, soda and nutmeg until smooth. In another bowl, combine the buttermilk, oil, mashed banana and egg. Stir the liquid ingredients into the dry ingredients all at once, stirring just until the dry ingredients are moistened. Fold in the dates.

Grease 12 large muffin cups generously. Spoon muffin batter into the cups. Bake at 375° for about 18 minutes or until toothpick test indicates muffins are done.
