Banana bran muffins
Ingredients/Components
- cinnamon - 1/2 tsp
- vanilla - 1 tsp
- salt - 1 tsp
- brown sugar - 1/2 c
- baking powder
- baking soda - 1 tsp
- vegetable oil - 1/2 c
- egg - 1 item
- all-purpose flour - 1 c
- chopped walnuts - 1 c
- raisins - 1/2 c
- hot water - 1 c
- ripe bananas, mashed - 2 item
- unprocessed bran
How to make banana bran muffins:
Preheat oven to 350°. Combine hot water, bran and raisins and set aside. Sift flour, baking soda, baking powder, salt and cinnamon and set aside.Mix thoroughly brown sugar, vanilla, vegetable oil, egg and bananas. Combine banana mixture and bran mixture, blending well. Stir into dry ingredients only until batter is moist. Do not overmix! Add walnuts. Spray muffin tin with Pam. Spoon batter into pan and bake for 15 minutes or until done.
