Ingredients/Components

  • ziti, cooked al dente and drained - 1 lb
  • butter - 3 Tbsp
  • black pepper - 1 tsp
  • Parmesan cheese, grated - 1/2 c
  • Romano cheese, grated - 1/2 c
  • fresh Ricotta cheese - 1 lb
  • sauce - 2 c
  • Mix well and add 1/4 cup Parmesan cheese and 1/4 cup Romano cheese
  • garlic cloves, minced - 4 item
  • large onions, finely chopped - 4 item
  • salt
  • pepper - 1/2 tsp
  • dry oregano - 2 tsp
  • dry basil - 2 Tbsp
  • hot red pepper flakes - 1/8 tsp
  • cans Italian plum tomatoes, run through food mill - 2 lb
  • sugar - 1/2 tsp

How to make baked ziti:

In a large bowl, combine ziti, butter and pepper. Mix well and add 1/4 cup Parmesan cheese and 1/4 cup Romano cheese. Mix well.

In a baking dish, make a layer of the pasta. Sprinkle with some Parmesan and Romano cheese. Add layer of Ricotta. Cover with sauce. Repeat layering, ending with sauce and grated cheese. Cook, uncovered, in preheated oven at 375° until bubbly and brown. Serves 4 to 6.Pasta Sauce For Ziti:4 Tbsp. olive oil4 garlic cloves, minced4 large onions, finely chopped1 1/2 tsp. salt1/2 tsp. pepper2 tsp. dry oregano2 Tbsp. dry basil1/8 tsp. hot red pepper flakes2 (2 lb.) cans Italian plum tomatoes, run through food mill1/2 tsp. sugar In a pot, heat oil and saute garlic until soft. Add the onions and cook until soft. Stir in salt, pepper, oregano, basil and red pepper flakes, blending well. Add the tomatoes and sugar, stirring until well mixed. Bring to a boil, then lower to a simmer and cook, uncovered, for 35 minutes, stirring often. Do not overcook. It should be smooth and thick but not heavy. Makes 6 cups and can be frozen.
