Baked stuffed zucchini
Ingredients/Components
- egg, slightly beaten - 1 item
- pepper - 1/4 tsp
- garlic salt - 1 tsp
- grated cheese - 1/4 c
- bread crumbs - 1/2 c
- oregano - 1 tsp
- ground meat
- chopped parsley - 1 tsp
- finely chopped onion - 1/2 c
- medium zucchini - 6 item
- can condensed tomato soup - 1 item
How to make baked stuffed zucchini:
Cut zucchini lengthwise; scoop out pulp and seeds, leaving 1/4-inch shells. Parboil in salted water for 5 minutes; drain. Place 2 pieces of heavy foil in tray or large baking pan; set aside.Combine meat, soup, bread crumbs, onion, egg, oregano, garlic salt and pepper in a small bowl. Mix well. Spoon into shells. Place on foil. Sprinkle with cheese. Close and seal foil. Bake for 1 hour or until zucchini is tender. Garnish with parsley and serve.
