Swedish potatoes
Ingredients/Components
- chopped onion - 1/4 c
- chopped green pepper - 1/2 c
- salt and pepper - 1 item
- small jar pimentos - 1 item
- heavy whipping cream - 1/2 pt
- to 8 medium potatoes - 6 item
- bacon, fried and crumbled - 1/2 lb
- small box Velveeta cheese - 1 item
How to make swedish potatoes:
Cook potatoes in jackets. Butter 2-quart casserole dish. Cube cooked potatoes into dish. Melt Velveeta cheese in cream (either in double boiler or microwave) to make a smooth sauce. Add remaining ingredients to potatoes with exception of bacon. Pour cheese sauce over potatoes and top with crumbled bacon.
