Ingredients/Components

  • chopped onion - 1/4 c
  • chopped green pepper - 1/2 c
  • salt and pepper - 1 item
  • small jar pimentos - 1 item
  • heavy whipping cream - 1/2 pt
  • to 8 medium potatoes - 6 item
  • bacon, fried and crumbled - 1/2 lb
  • small box Velveeta cheese - 1 item

How to make swedish potatoes:

Cook potatoes in jackets. Butter 2-quart casserole dish. Cube cooked potatoes into dish. Melt Velveeta cheese in cream (either in double boiler or microwave) to make a smooth sauce. Add remaining ingredients to potatoes with exception of bacon. Pour cheese sauce over potatoes and top with crumbled bacon. Bake at 350° or 375° for 20 minutes or until brown on top.
