Ingredients/Components

  • butter - 2 Tbsp
  • egg, beaten - 1 item
  • bread crumbs - 1 item
  • salt and pepper to taste - 1 item
  • onion - 1 item
  • eggplant - 1 item
  • tomato slices optional - 1 item
  • slices stale bread, soaked in water and squeezed - 3 item

How to make baked eggplant:

Boil eggplant in salted water until tender. Drain and cool. Remove skin. Place in a bowl and chop. Add egg, bread, salt and pepper. Fry onion in butter until brown. Mix all together well. Put in greased baking dish and top with butter and crumbs. Add tomato slices before crumbs, if desired. Bake at 350° about 20 minutes or until brown.

This dish may be prepared ahead and cooked just before serving time.
