Ingredients/Components
- grated Parmesan cheese - 3 Tbsp
- chopped parsley - 2 Tbsp
- large eggplant, sliced - 2 item
- tomato juice or spaghetti sauce - 2 c
- green pepper, cut up in strips - 1 item
- salt, pepper and minced garlic - 1 item
How to make baked eggplant:
In 9 x 13-inch baking dish, alternate layers of tomato juice, sliced eggplant (which have been sprinkled with salt and pepper), garlic and parsley. Top all with cheese and strips of green pepper.
