Artichoke nibbles
Ingredients/Components
- eggs - 4 item
- salt - 1/4 tsp
- clove garlic, minced - 1 item
- fine dry bread crumbs - 1/4 c
- dash of pepper - 1 item
- small onion, chopped - 1 item
- minced parsley - 2 Tbsp
- dash of oregano - 1 item
- 2 c - 1/2 lb
- jars marinated artichoke hearts - 2 oz
How to make artichoke nibbles:
Drain marinade from one jar of artichokes into a frying pan. (Discard marinade from second jar.) Chop artichokes in food processor and set aside. Saute onion and garlic in the frying pan until limp (about 5 minutes).In a bowl, beat eggs; add crumbs, salt, pepper and oregano. Stir in cheese, parsley and artichokes, plus onion mixture. Turn into a greased 8 x 8-inch baking dish. Bake at 325° for 30 minutes or until set when lightly touched. Let cool in pan. Cut into one inch squares.
