Artichoke balls
Ingredients/Components
- eggs - 2 item
- Parmesan cheese - 2 Tbsp
- olive oil - 2 Tbsp
- minced garlic - 2 tsp
- fresh lemon juice - 1 Tbsp
- thyme - 1/4 tsp
- seasoned bread crumbs - 1 c
- paprika for garnish - 1 item
- can marinated artichoke hearts, drained and finely chopped - 1 3/4
How to make artichoke balls:
May be refrigerated up to 8 hours prior to serving. Freezes well. Allow 5 minutes extra cooking time if it has been chilled.Preheat oven to 350°. In medium bowl, combine chopped artichokes, bread crumbs, eggs, olive oil, 2 tablespoons Parmesan cheese, lemon juice and garlic. Form mixture into 24 balls, 1-inch in diameter and roll in remaining Parmesan cheese and paprika. Bake 10 to 12 minutes.
