Ingredients/Components

  • eggs - 2 item
  • Parmesan cheese - 2 Tbsp
  • olive oil - 2 Tbsp
  • minced garlic - 2 tsp
  • fresh lemon juice - 1 Tbsp
  • thyme - 1/4 tsp
  • seasoned bread crumbs - 1 c
  • paprika for garnish - 1 item
  • can marinated artichoke hearts, drained and finely chopped - 1 3/4

How to make artichoke balls:

May be refrigerated up to 8 hours prior to serving. Freezes well. Allow 5 minutes extra cooking time if it has been chilled.

Preheat oven to 350°. In medium bowl, combine chopped artichokes, bread crumbs, eggs, olive oil, 2 tablespoons Parmesan cheese, lemon juice and garlic. Form mixture into 24 balls, 1-inch in diameter and roll in remaining Parmesan cheese and paprika. Bake 10 to 12 minutes.
