Ingredients/Components

  • milk - 1/2 c
  • eggs, beaten - 2 item
  • salt and pepper to taste - 1 item
  • mayonnaise - 1/2 c
  • grated Cheddar cheese - 1 c
  • can cream of celery soup - 1 item
  • finely chopped onion - 1/2 c
  • finely chopped green pepper - 1/2 c
  • cooked rice - 3 c
  • zucchini, sliced 5 to 6 c

How to make zucchini rice casserole:

Parboil squash 5 minutes; drain. Combine squash, green pepper, onion and rice. Mix rest of ingredients and add to rice mixture. Bake in a 2-quart casserole dish at 350° for 30 minutes.

May substitute with Egg Beaters, lite mayonnaise and low-fat cheese.
