Zucchini rice casserole
Ingredients/Components
- milk - 1/2 c
- eggs, beaten - 2 item
- salt and pepper to taste - 1 item
- mayonnaise - 1/2 c
- grated Cheddar cheese - 1 c
- can cream of celery soup - 1 item
- finely chopped onion - 1/2 c
- finely chopped green pepper - 1/2 c
- cooked rice - 3 c
- zucchini, sliced 5 to 6 c
How to make zucchini rice casserole:
Parboil squash 5 minutes; drain. Combine squash, green pepper, onion and rice. Mix rest of ingredients and add to rice mixture. Bake in a 2-quart casserole dish at 350° for 30 minutes.May substitute with Egg Beaters, lite mayonnaise and low-fat cheese.
