- eggs - 3 item
- oil - 1 c
- sugar - 2 c
- vanilla - 1 tsp
- ground zucchini - 2 c
- flour - 3 c
- soda - 2 tsp
- baking powder - 1 tsp
- salt - 1/2 tsp
- cinnamon
- nutmeg - 1 tsp
- nuts - 1/2 c
- crushed pineapple, drained - 1 c
How to make zucchini pineapple bread:
Beat eggs, oil, sugar and vanilla until thick. Stir in zucchini, flour, soda, baking powder, cinnamon, nutmeg and salt. Add the nuts. Beat all together until well blended. Add pineapple. Stir in gently. Pour into 2 loaf pans. Bake at 350° for 1 hour.Recipe categories: Breads, Quick breads, Squash.
