Ingredients/Components

  • salt - 1/2 tsp
  • large egg - 1 item
  • pepper - 1/8 tsp
  • chopped onion - 1/2 c
  • can tomato sauce - 1 oz
  • 4 oz - 1 c
  • ground beef - 1/2 lb
  • dried oregano - 1/2 tsp
  • dried basil - 1/4 tsp
  • all-purpose flour, divided - 2 Tbsp
  • container cottage cheese - 1 (12
  • , thinly sliced and divided - 4 medium

How to make zucchini lasagna:

Cook beef and onion in a skillet until meat is browned, stirring until it crumbles. Drain off pan drippings. Stir in tomato sauce and next 4 ingredients. Bring to a boil. Reduce heat and simmer, uncovered, for 5 minutes, stirring occasionally.

Layer half of zucchini in an 11 x 7 x 1 1/2-inch baking dish. Sprinkle with 1 tablespoon flour. Combine cottage cheese and egg. Spread over zucchini. Spoon half of meat sauce over cottage cheese mixture, spreading evenly.

Repeat layers with zucchini, flour and meat sauce. Bake at 375° for 35 minutes or until thoroughly heated. Sprinkle with Mozzarella cheese and bake 5 additional minutes. Yields 6 servings.
