Ingredients/Components
- eggs - 4 item
- grated Parmesan cheese - 2 c
- mayonnaise - 2 c
- medium onion, chopped - 1 item
- Italian bread crumbs - 1 item
- whole green pepper, chopped - 1 item
- medium size zucchini or 2 bags frozen, sliced - 10 item
How to make zucchini casserole:
Cook zucchini in salt water until clear. Mix mayonnaise, eggs, green pepper and onion. Drain zucchini; add to mixture. Fold in Parmesan cheese. Top with bread crumbs. Bake at 350° for 35 minutes.Recipe categories: Egg, Side dish, Casseroles.
