Ingredients/Components
- chopped cooked zucchini unpeeled - 2 c
- chopped onion - 1 c
- butter - 1/2 c
- seasoned croutons - 2 c
- diced chicken - 1 c
- can cream of chicken soup - 1 item
- sour cream - 3/4 c
How to make zucchini casserole:
Saute onion in butter. Mix zucchini and onion and add croutons, chicken, soup and sour cream. Trim ends of zucchini and slice in halves lengthwise. Boil in salted water until tender, about 4 minutes. Use 1 1/2-quart casserole; use more croutons or bread crumbs on top and bake at 350° for 30 minutes.Recipe categories: Egg, Side dish, Casseroles.
