Zucchini casserole
Ingredients/Components
- garlic salt - 1 item
- chopped onion - 1 c
- chopped green pepper - 1/4 c
- salt and pepper - 1 item
- parsley - 1 item
- low-fat mayonnaise - 1 c
- butter or oil - 1 Tbsp
- eggs or Egg Beaters - 2 item
- grated Italian cheese - 1 c
- pinch of dill - 1 item
- sliced frozen carrots - 1 pkg
- zucchini, sliced or chunks - 4 c
- bread crumbs or crumbled potato chips or Ritz crackers - 2 Tbsp
How to make zucchini casserole:
Cook or steam zucchini until tender; drain. In large bowl beat eggs, stir in mayonnaise, onions, green peppers, herbs and add zucchini. Turn into greased 1 1/2-quart baking dish. Sprinkle with crumbs and dot with butter. Bake at 350° for 30 minutes.Recipe categories: Egg, Side dish, Casseroles.
