Ingredients/Components

  • pepper - 1/4 tsp
  • garlic salt - 1/2 tsp
  • Parmesan cheese - 1/2 c
  • olive oil - 3 Tbsp
  • medium onion, sliced - 1 item
  • clove minced garlic - 1 item
  • can diced tomatoes with juice - 28 oz
  • shredded Mozzarella - 3/4 c
  • dry stuffing mix
  • basil dried - 1 tsp
  • oregano dried - 1/2 tsp
  • sliced zucchini 3 to 4 medium

How to make zucchini casserole:

Saut?© zucchini in 1 tablespoon oil until soft (not mushy), then set aside. Saut?© onions and garlic in 2 tablespoons oil until soft. Add next 5 ingredients and simmer, uncovered, for 10 minutes. Put zucchini in 9 x 13 pan and cover with tomato mixture; stir. Top with stuffing. Sprinkle on Parmesan cheese. Cover and bake at 350° for 20 minutes. Uncover. Top with Mozzarella and bake for 10 minutes.
