Zucchini casserole
Ingredients/Components
- pepper - 1/4 tsp
- garlic salt - 1/2 tsp
- Parmesan cheese - 1/2 c
- olive oil - 3 Tbsp
- medium onion, sliced - 1 item
- clove minced garlic - 1 item
- can diced tomatoes with juice - 28 oz
- shredded Mozzarella - 3/4 c
- dry stuffing mix
- basil dried - 1 tsp
- oregano dried - 1/2 tsp
- sliced zucchini 3 to 4 medium
How to make zucchini casserole:
Saut?© zucchini in 1 tablespoon oil until soft (not mushy), then set aside. Saut?© onions and garlic in 2 tablespoons oil until soft. Add next 5 ingredients and simmer, uncovered, for 10 minutes. Put zucchini in 9 x 13 pan and cover with tomato mixture; stir. Top with stuffing. Sprinkle on Parmesan cheese. Cover and bake at 350° for 20 minutes. Uncover.
