Ingredients/Components
- butter - 1/4 c
- medium onion - 1 item
- shredded Mozzarella cheese - 1/2 c
- medium zucchini - 1 item
- can mushroom soup - 1 item
- can tomatoes, drained or 4 fresh tomatoes - 1 lb
How to make zucchini casserole:
Butter baking dish. Slice zucchini into 1/2-inch slices. Parboil until it changes color; let cool slightly. Blend together soup and melted butter. Layer zucchini, tomatoes (sliced), thinly sliced onions, sauce and half of the cheese; repeat. Bake at 350° for 1/2 hour.Recipe categories: Egg, Side dish, Casseroles.
