Ingredients/Components
- carton sour cream - 1 oz
- can cream of mushroom soup - 1 item
- stick margarine, melted - 1 item
- medium onion, grated - 1 item
- medium carrots, grated - 2 item
- cornbread stuffing - 1 pkg
- medium zucchini, grated - 2 item
- small jar chopped pimento, undrained - 1 item
How to make zucchini casserole:
Grate zucchini, carrots and onion. Add pimento with liquid, soup and sour cream. In another bowl, pour melted margarine over stuffing. Layer vegetable mixture and stuffing to fill a 1 1/2-quart greased casserole dish. Bake at 350° for 30 minutes. This may be divided and frozen before baking.
