Ingredients/Components
- sugar
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 2 tsp
- flour - 3 c
- oil - 1 c
- baking powder - 1 tsp
- baking soda - 1 tsp
- pinch of salt - 1 item
- nuts - 1 c
- raisins - 1 c
- shredded, unpeeled zucchini about 2 medium - 3 c
How to make zucchini bread:
In a large bowl, mix together flour, sugar, cinnamon, salt, baking powder, baking soda, zucchini, raisins and nuts. In another bowl, beat together the eggs, vanilla and oil. Pour over flour mixture and stir until thoroughly mixed. Turn into 2 greased loaf pans. Bake at 350° for approximately 1 1/2 hours. Makes 2 loaves.Recipe categories: Breads, Quick breads, Sweet.
