  • sugar - 2 c
  • cinnamon - 1 Tbsp
  • vanilla - 3 tsp
  • salt - 1 tsp
  • flour - 3 c
  • nutmeg - 1 tsp
  • oil - 1 c
  • baking powder - 4 tsp
  • baking soda - 1 tsp
  • allspice - 1 tsp
  • raisins or nuts - 3/4 c
  • eggs, beaten until light - 3 item
  • grated and peeled zucchini - 2 c

How to make zucchini bread:

Mix together all ingredients. Put in 2 greased bread pans (4 x 8 1/2-inch). Bake 1 hour at 350°. Makes 2 loaves.
