  • grated zucchini
  • flour - 2 c
  • salt - 1/4 tsp
  • baking soda - 1/4 tsp
  • baking powder - 1/2 tsp
  • mace - 1/2 tsp
  • cinnamon - 1 tsp
  • sugar - 1 c
  • eggs - 2 item
  • oil - 1/2 c
  • lemon juice - 1 Tbsp
  • vanilla extract - 1 tsp
  • chopped walnuts - 1/2 c

How to make zucchini bread:

Preheat oven to 325°. Grease loaf pans. Grate the zucchini; set aside. Stir together the dry ingredients. Make a well inside and pour in the liquid. Stir to blend well, then stir in the zucchini and nuts. Pile into greased loaf pan or mini loaf pans. Bake 1 1/4 hours for loaf, 40 to 50 minutes for smaller loaves depending on size. Makes 1 large or 2 small loaves.
