Zucchini au gratin
Ingredients/Components
- eggs - 2 item
- evaporated milk - 1/2 c
- margarine - 2 Tbsp
- sliced zucchini - 8 c
- minced onion - 1 c
- Parmesan cheese, grated
- dried bread crumbs - 3 Tbsp
- each: salt, pepper and nutmeg - 1/2 tsp
How to make zucchini au gratin:
Cook zucchini in water (3/4 cup) for 8 to 10 minutes. Drain and cool. Melt butter; add onion. Cook until onion is tender. Add zucchini. Pour into 8-inch square baking dish. Combine eggs, milk, salt, pepper and nutmeg. Pour over zucchini. Combine bread crumbs, cheese and some red pepper for garnish. Sprinkle over zucchini and bake until set, 15 to 18 minutes.Recipe categories: < 15 mins, Time to make, Vegetarian.
