Yogurt pancakes
Ingredients/Components
- eggs, separated - 2 item
- baking powder - 1 tsp
- honey - 1 Tbsp
- plain yogurt - 1 c
- melted butter or safflower oil - 1 Tbsp
- oil for sauteing - 1 item
- honey for topping - 1 item
- whole wheat pastry flour, sifted
- pinch of sea salt - 1 item
How to make yogurt pancakes:
Beat egg yolks, honey, yogurt and melted butter together. Sift flour, salt and baking powder. Stir egg yolk mixture into flour mixture. Beat egg whites until stiff. Fold into batter.Heat frying pan over medium-high heat and brush with oil. Drop batter in by heaping tablespoonfuls. Cook until bubbles break through. Turn and cook until golden brown. Serve warm with honey or maple syrup.
