Buckwheat pancakes
Ingredients/Components
- milk - 1 c
- eggs, separated - 2 item
- baking powder - 1 tsp
- honey - 2 Tbsp
- sea salt - 1/4 tsp
- melted butter or safflower oil - 1 Tbsp
- sifted whole wheat pastry flour - 3/4 c
- sifted buckwheat flour - 3/4 c
- oil for sauteing - 1 item
- honey for topping - 1 item
How to make buckwheat pancakes:
Beat egg yolks, honey, milk and melted butter or safflower oil. Sift whole wheat pastry flour, buckwheat flour, sea salt and baking powder together. Stir egg yolk mixture into flour mixture. Beat egg whites until they form stiff shiny peaks. Gently fold into batter.Heat a frying pan over medium-high heat and brush with oil. Drop in heaping tablespoonfuls of batter. Flip over when bubbles break through. Serve warm with honey or maple syrup. Makes 18 pancakes.
