Ingredients/Components

  • pkg - 1 oz
  • salt - 1/2 tsp
  • flour - 2 Tbsp
  • margarine - 2 Tbsp
  • skim milk
  • chopped onion - 1/3 c
  • can chicken broth - 1 oz
  • dash of pepper - 1 item
  • dill weed - 1/2 tsp
  • mustard seed - 1/2 tsp
  • shredded Swiss cheese 4 oz - 1 c

How to make cream of broccoli soup:

Cook cauliflower, covered, in 1/2 cup broth for 5 to 8 minutes. Do not drain. Process in blender until smooth. Cook broccoli, covered, in remaining broth with mustard seed and dill weed for 5 to 8 minutes. Do not drain. Process in blender. Saut?© onion in margarine until tender. Add flour, salt and pepper. Add milk. Cook, stirring until thickened. Add cauliflower, broccoli and cheese to sauce. Cook and stir until just heated through and cheese is melted.

Diabetic exchanges per 1 cup serving: 1/2 milk, 2 vegetables, 1 medium-fat meat and 1 fat.
