Ingredients/Components

  • warm water - 5 c
  • honey OR *1 c - 1/2 c
  • oil - 1/2 c
  • liquid lecithin - 3 Tbsp
  • salt - 2 Tbsp
  • wheat flour - 5+ c
  • gluten flour - 1/2 c
  • Fernipan yeast OR 2 Tbsp - 1 Tbsp
  • tepid water

How to make whole wheat bread:

In large mixing bowl, combine all ingredients at low speed. Increase speed to medium when all combined, then increase the speed by half and beat 5 minutes, adding flour as/if necessary to achieve the consistency you want. Cover the bowl with plastic and a towel and let rest for 20-30 minutes. Punch down the dough. Form into 4 loaves. Cover the loaves with plastic and a towel and let rise.
