Yeast cornbread
Ingredients/Components
- yeast - 2 Tbsp
- honey - 3 Tbsp
- warm water
- oil - 2 Tbsp
- cornmeal - 2 c
- unbleached flour - 1 c
- wheat flour - 1 c
- oats - 1/2 c
- wheat germ - 1/2 c
- salt - 1 tsp
How to make yeast cornbread:
Combine first 3 ingredients. Combine dry ingredients in another bowl. Add oil to yeast mixture. Add yeast mixture to dry ingredients all at once. Stir only until mixed. Pour into sprayed 9 x 13-inch baking pan. Smooth top with knife. Rise 20 to 30 minutes. Bake at 350° for 45 minutes.Variation: Add 1 cup chopped dates or coconut.
