Rhubarb bread
Ingredients/Components
- sugar - 1/2 c
- vanilla - 1 tsp
- salt - 1 tsp
- chopped nuts - 1/2 c
- flour - 3 c
- brown sugar - 1-1/2 c
- oil - 2/3 c
- buttermilk - 3/4 c
- baking soda - 1 tsp
- egg - 1 item
- margarine - 1 Tbsp
- chopped rhubarb - 1-1/2 c
How to make rhubarb bread:
Combine sugar with margarine for topping and set aside. Heat oven to 325°. Grease the bottom of two 8 x 4 inch loaf pans. Combine brown sugar, buttermilk, oil and eggs, and blend until smooth. Add the flour and mix well. Stir in the rhubarb and the nuts. Pour into pans. Sprinkle with a topping of 1/2 c. sugar mixed with 1 Tbsp. margarine. Bake for 50-60 minutes, or until bread tests done. Cool in pan 10 minutes then remove to wire rack and cool completely.Recipe categories: < 4 hours, Breads, Weeknight.
