White fruit cake
Ingredients/Components
- sugar
- eggs - 12 item
- flour - 4 c
- butter - 1 lb
- lemon flavoring - 1 Tbsp
- pineapple - 1 lb
- golden raisins - 1 lb
- shelled pecans - 1 lb
- cherries - 1 lb
- citron - 1/2 lb
- fresh coconut, grated - 1 item
How to make white fruit cake:
Dice all fruit. Cut up nuts. Add grated coconut. Dredge with 3 cups flour. Cream the butter, sugar, eggs and flavoring. Add remaining cup of flour. Pour this batter over dredged fruit and nuts. Mix thoroughly. Bake in oven about 275° for about 2 hours.In memory of Mrs. Esther Harrelson.
