  • eggs - 5 item
  • vanilla - 2 Tbsp
  • flour
  • butter - 1 c
  • baking powder - 1/2 tsp
  • white sugar - 1 c
  • lemon extract - 2 Tbsp
  • candied cherries, chopped - 3/4 lb
  • candied pineapple, chopped - 1 lb
  • coarsely chopped pecans - 4 c

How to make white fruit cake:

Cream the butter and sugar until light and fluffy. Add eggs, one at a time, beating thoroughly after each addition. Mix in flavorings. Add flour and baking powder. Beat until blended. Fold in pecans and fruits. Turn into a 10-inch tube pan lined with greased waxed paper. Bake at 250° for 3 hours. Cool. Keep refrigerated or can be frozen.
