White fruit cake
Ingredients/Components
- eggs - 5 item
- vanilla - 2 Tbsp
- flour
- butter - 1 c
- baking powder - 1/2 tsp
- white sugar - 1 c
- lemon extract - 2 Tbsp
- candied cherries, chopped - 3/4 lb
- candied pineapple, chopped - 1 lb
- coarsely chopped pecans - 4 c
How to make white fruit cake:
Cream the butter and sugar until light and fluffy. Add eggs, one at a time, beating thoroughly after each addition. Mix in flavorings. Add flour and baking powder. Beat until blended. Fold in pecans and fruits. Turn into a 10-inch tube pan lined with greased waxed paper. Bake at 250° for 3 hours. Cool.
