White bean salad
Ingredients/Components
- sugar
- salt
- water - 1 item
- cloves garlic, minced - 5 item
- olive oil - 1 c
- chopped parsley - 1 item
- lemon wedges - 1 item
- large onion, chopped - 1 item
- dried white beans - 1 lb
- medium-sized potato, peeled and diced - 1 item
- large carrot, sliced or diced - 1 item
How to make white bean salad:
Soak beans overnight in water to cover (or cover beans with water, bring to a boil, boil 2 minutes, let stand 1 hour).In a large heavy pan, saute onion in olive oil until soft, but not browned. Add the beans, including soaking water, potato, carrot, garlic, sugar and salt.
Cover and simmer until beans are tender but still hold their shape, about 1 hour. Add water, if needed, to just cover the beans. Cool in the pan. Serve at room temperature with the pan juices and sprinkle chopped parsley over the top. Garnish with lemon wedges, if desired.
