Ingredients/Components
- margarine - 8 oz
- caster sugar - 6 oz
- currants - 6 oz
- large or 2 small eggs - 1 item
- self-rising flour can use plain flour, but add 2 tsp - 16 oz
How to make welsh cakes:
Rub margarine (mix) into flour. Add caster sugar. Add currants. Beat eggs and mix into dry ingredients. The mixture should be easy to roll out to approximately 1/4-inch thick. Add another egg or a little milk if mixture is too dry. Cut into rounds and bake on a griddle or frying pan.
