  • eggs - 2 item
  • salt - 3/4 tsp
  • paprika - 1 item
  • butter, at room temperature - 2 Tbsp
  • thinly sliced Vidalia onions - 2 c
  • finely crushed Ritz crackers
  • milk do not use low-fat - 3/4 c
  • packed grated sharp Cheddar cheese - 3/4 c

How to make vidalia onion pie:

Preheat oven to 350°. Mix crackers and 4 tablespoons butter in bowl until well blended. Press mixture on bottom and 1 inch up side of 8-inch pie plate.

Melt remaining 2 tablespoons butter in heavy skillet. Add onions and saute until tender. Arrange onions in cracker crust. Beat milk, eggs and salt in medium bowl. Season with paprika and pour over onions in crust. Sprinkle cheese over filling. Bake until knife inserted, comes out clean, about 35 minutes.
