Vegetarian stew
Ingredients/Components
- pkg - 1 oz
- water - 2 c
- garlic powder - 2 tsp
- tomato juice - 1 qt
- ground cumin - 1 tsp
- large onion, diced - 1 item
- dried basil leaves - 2 tsp
- carrots, sliced - 2 item
- dried parsley - 2 Tbsp
- can kidney beans, drained - 1 oz
- can garbanzo beans, drained - 1 oz
- lentils, rinsed and drained - 1 c
- each cans stewed tomatoes - 2 15
- small seashell macaroni - 1/2 1
- medium potatoes, unpeeled and diced - 2 item
- each red and green pepper, diced - 1 c
How to make vegetarian stew:
In a large kettle, combine all ingredients except macaroni. Bring to a boil, then reduce heat, cover and simmer until lentils are tender, about 45 minutes. Add macaroni and simmer until done.Recipe categories: Main dish, Stew, Crock pot.
