Ingredients/Components

  • pkg - 1 oz
  • water - 2 c
  • garlic powder - 2 tsp
  • tomato juice - 1 qt
  • ground cumin - 1 tsp
  • large onion, diced - 1 item
  • dried basil leaves - 2 tsp
  • carrots, sliced - 2 item
  • dried parsley - 2 Tbsp
  • can kidney beans, drained - 1 oz
  • can garbanzo beans, drained - 1 oz
  • lentils, rinsed and drained - 1 c
  • each cans stewed tomatoes - 2 15
  • small seashell macaroni - 1/2 1
  • medium potatoes, unpeeled and diced - 2 item
  • each red and green pepper, diced - 1 c

How to make vegetarian stew:

In a large kettle, combine all ingredients except macaroni. Bring to a boil, then reduce heat, cover and simmer until lentils are tender, about 45 minutes. Add macaroni and simmer until done.
