Vegetable stir-fry
Ingredients/Components
- cornstarch - 1/2 Tbsp
- oil - 1 Tbsp
- clove garlic, minced - 1 item
- mushrooms, sliced - 1 c
- teriyaki sauce - 3 Tbsp
- small onion, sliced - 1 item
- green pepper, sliced - 1/2 c
- carrots, thinly sliced - 3/4 c
- cashews or peanuts - 3 Tbsp
- cauliflower, sliced - 2 c
How to make vegetable stir-fry:
Combine oil, garlic, onion and mushrooms in a microwave-safe casserole. Microwave on High, uncovered, for 1 1/2 to 2 minutes. Stir in cauliflower, carrots and pepper. Cover with lid and microwave 3 1/2 to 4 minutes. Stir once.Combine teriyaki sauce and cornstarch in 1-cup glass measure. Drain juice from vegetables into cup and mix well. Microwave on High for 1 to 1 1/2 minutes. Stir once. Pour over vegetables. Sprinkle with nuts. Toss lightly.
