Vegetable stir-fry
Ingredients/Components
- cornstarch - 1/2 Tbsp
- oil - 1 Tbsp
- clove garlic, minced - 1 item
- mushrooms, sliced - 1 c
- teriyaki sauce - 3 Tbsp
- small onion, sliced - 1 item
- carrots, thinly sliced - 3/4 c
- cashews or peanuts - 3 Tbsp
- cauliflower, sliced in pieces - 2 c
- green pepper, sliced in pieces - 1/2 c
How to make vegetable stir-fry:
Combine oil, garlic, onion and mushrooms in a microwave casserole dish. Microwave on High, uncovered, for 1 1/2 to 2 minutes. Stir in cauliflower, carrots and green pepper; cover with lid. Microwave for 3 1/2 to 4 minutes; stir once. Combine teriyaki sauce and cornstarch in 1-cup measuring glass. Drain juices from vegetables into cup and mix well. Microwave on High, uncovered, for 1 to 1 1/2 minutes; stir once. Pour over vegetables. Sprinkle with nuts. Toss lightly.Recipe categories: Low protein, Low sodium, European.
