  • sugar - 1 tsp
  • salt - 1/8 tsp
  • grated Parmesan cheese - 1 Tbsp
  • whole wheat flour
  • onion, chopped - 1/2 lb
  • active dry yeast - 1 tsp
  • shredded fat-free Mozzarella cheese - 4 oz
  • canola oil, divided - 1 Tbsp
  • warm water 120~ - 1/2 c
  • can low sodium tomato sauce - 1 oz
  • small green pepper, cut into rings or chopped - 1 item

How to make vegetable pizza:

In medium bowl, combine 3/4 cup of flour, yeast, sugar, salt, water and 2 teaspoons oil; mix with mixer on low until flour is just moistened. Gradually stir in remaining flour to make a soft dough. Turn dough onto lightly floured surface. Knead about 5 minutes or until smooth and elastic. Place dough in greased bowl. Turn dough over to expose greased side; cover with towel. Set in warm place to rise about 45 minutes or until doubled.

Meanwhile, in large skillet (nonstick or spray with vegetable spray) over medium heat, use remaining hot oil and add mushrooms and onions. Cook about 5 minutes or until tender, stirring occasionally. Punch down dough; form dough to fit in 12-inch pizza pan which is sprayed with vegetable spray. Spread tomato sauce over dough; sprinkle with mushrooms, onion mixture, Mozzarella and Parmesan cheese. Bake at 475° for 15 to 20 minutes or until crust is browned.
