Vanilla cream pie
Ingredients/Components
- sugar - 3/4 c
- vanilla - 1 tsp
- salt - 1/4 tsp
- butter - 2 Tbsp
- slightly beaten egg yolks - 3 item
- 9-inch baked pastry shell - 1 item
- all-purpose flour or 3 Tbsp - 1/3 c
- milk I use half evaporated milk - 2 c
How to make vanilla cream pie:
Mix sugar, flour and salt well. Add to hot milk. Bring to boil and boil 2 minutes. Add beaten egg yolk, return to heat and boil 2 more minutes, remove from heat and add butter and vanilla. Pour into pie crust. Top with meringue.Meringue: 3 egg whites; beat well. Add 1/2 teaspoon vanilla and 1/4 teaspoon cream of tartar. Continue beating until soft peaks form, gradually adding 4 tablespoons sugar. Beat until light and glossy peaks form. Spread over hot filling. Bake at 350° until meringue is golden.
Chocolate Cream Pie: Prepare Vanilla Cream Pie, increasing sugar to 1 cup, 2 (1 ounce) squares unsweetened chocolate or 6 tablespoons cocoa and 2 tablespoons butter.
Coconut Cream Pie: Add 1 cup coconut to Vanilla Cream Pie. Top meringue with 1/3 cup coconut.
Banana Cream Pie: Slice 3 bananas in baked pie shell. Top with Vanilla Cream Pie filling.
