  • dairy sour cream - 1/2 c
  • margarine - 1 item
  • egg, well beaten - 1 item
  • salt and pepper - 1 item
  • baking potatoes - 4 lb
  • cubed American cheese - 1/4 c
  • green onion, chopped - 1 Tbsp

How to make twice-baked potatoes:

Rub potatoes with margarine and prick with a fork. Bake at 400° for 45 minutes or until done. Cut a lengthwise opening in top and scoop out potato. Set shells aside. Mash potatoes while hot with sour cream, margarine and egg. Beat until fluffy. Stir in onion and cheese. Season with salt and pepper. Spread inside of shells with margarine. Pile mashed potatoes lightly and high into shells. Bake at 425° about 20 minutes.
