Ingredients/Components

  • sugar - 3/4 c
  • eggs - 2 item
  • salt - 1/2 tsp
  • flour
  • butter - 1/4 lb
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • can pineapple chunks - 8 oz
  • and 1 Tbsp - 1/2 c
  • large ripe bananas - 2 item

How to make tropical fruit bread:

Heat oven to 350°. Butter an 8 1/2 x 4 1/2-inch loaf pan. Mash bananas. Drain pineapple. On low speed, beat flour, sugar, baking powder, soda, salt, eggs, bananas and butter (softened) until blended. Increase speed to medium and beat for 2 minutes. Stir in pineapple and 1/2 cup of coconut. Pour into pan and sprinkle with remaining coconut. Bake about 1 hour. Cool ten minutes. Take out of pan and cool completely.
