Ingredients/Components
- water - 1 Tbsp
- salsa - 2 Tbsp
- corn tortillas, softened - 2 item
- shredded low-fat cheese - 1 Tbsp
- medium egg or egg substitute - 1 item
How to make tortilla eggs:
Beat egg with water in a small bowl. Lightly coat small skillet with nonstick cooking spray. Heat over medium heat. Pour in egg mixture; stir as egg begins to set. Cook until set, but still moist. Divide egg between tortillas; top with salsa and cheese and fold. Makes 1 serving.Substitute flour tortillas for corn tortillas for a different taste.
