Ingredients/Components

  • sugar - 1/2 c
  • cocoa - 1/8 c
  • large eggs, separated - 3 item
  • Brandy - 2 Tbsp
  • Mascarpone cheese - 8 oz
  • Espresso or strong coffee - 1 Tbsp
  • - 20 Dried Lady Fingers Toasted if necessary - 16 item

How to make tiramisu:

Prepare mascarpone mixture by combine 3 egg yolks, 1/2 c. sugar, 1 Tbsp. espresso or coffee, 2 Tbsp. brandy into a large mixing bowl. Beat with rotary beater or mixer for 2 to 3 minutes. Add mascarpone and continue to beat for another 3 to 5 minutes, until consistency is smooth. Set aside.

Combine 3 egg whites and a pinch of sugar and beat until mixture forms stiff peaks. Gently fold mascarpone mixture and egg white mixture together.

Pour some additional espresso or coffee into a flat dish and gently dip one side of the lady finger and layer on bottom of serving dish. Next add a layer of the mascarpone mixture. Sprinkle with cocoa. Continue with another layer of lady fingers, mascarpone mixture and cocoa. Refrigerate at least 1 hour before serving.
