Ingredients/Components

  • sugar - 1 Tbsp
  • salt - 1 tsp
  • water
  • vegetable oil - 3 Tbsp
  • chunky peanut butter - 1/3 c
  • small cucumber - 1 item
  • soy sauce - 2 Tbsp
  • white wine vinegar - 1/4 c
  • cayenne - 1/8 tsp
  • garlic cloves, minced - 2 item
  • converted rice - 1 c
  • grated fresh ginger - 1 tsp
  • onion, finely diced - 1/4 c
  • cut up, cooked chicken - 2 c
  • spinach leaves, cut into thin strips

How to make thai rice salad with peanut dressing:

Bring water to a boil and stir in rice and salt. Cover and simmer 20 minutes. Let stand covered 5 minutes. Transfer to large bowl and cool to room temperature. Combine peanut butter, vinegar, oil, soy sauce, sugar, ginger, garlic and cayenne. Peel cucumber and halve lengthwise. Slice thinly. Add to rice with chicken, onion and spinach. Toss. Add dressing and mix well. Serves 6.
