Ingredients/Components

  • dried tomatoes, cut into 1-inch pieces - 2 oz
  • potatoes - 1 lb
  • diced seedless cucumber - 1 c
  • sliced red onion - 1/2 c
  • Feta cheese, crumbled - 4 oz
  • oil cured black olives - 1/2 c
  • water
  • olive oil - 1/4 c
  • fresh lemon juice - 3 Tbsp
  • clove garlic, mashed - 1 item
  • fresh oregano or 1 tsp - 1 Tbsp
  • salt - 1/2 tsp
  • pepper fresh ground - 1/2 tsp

How to make turkish potato salad:

Lemon Dressing:1/4 c. water1/4 c. olive oil3 Tbsp. fresh lemon juice1 clove garlic, mashed1 Tbsp. fresh oregano or 1 tsp. dried1/2 tsp. salt1/2 tsp. pepper (fresh ground) Cover tomatoes with boiling water and set aside for 15 minutes. Boil potatoes until tender; peel and slice into 1/4-inch slices. Drain tomatoes and dry on paper towels. Put potatoes, tomatoes, cucumber, onion, cheese and olives into bowl. Toss lightly to mix. Pour on Lemon Dressing and mix lightly. Refrigerate several hours or serve at room temperature.

Lemon Dressing: Mix all ingredients together in a small bowl; whisk and pour over salad.
