Ingredients/Components

  • envelopes unflavored gelatin - 2 item
  • cold water - 1/4 c
  • sugar - 1/2 c
  • can crushed pineapple undrained - 1 oz
  • lemon juice - 2 Tbsp
  • maraschino cherry juice - 1/4 c
  • each pkg - 2 oz
  • maraschino cherries, quartered - 12 item
  • to 3 drops red food coloring optional - 2 item
  • carton frozen whipped topping, thawed - 1 oz

How to make sweetheart salad:

Soften gelatin in cold water. Meanwhile, in a saucepan, bring sugar and pineapple (with juice) to a boil, stirring until the sugar dissolves. Remove from heat. Add gelatin and stir until dissolved. Add lemon and cherry juices. Cool to lukewarm. Whisk in cream cheese until thoroughly combined. Stir in the cherries and food coloring, if desired. Chill until slightly thickened. Fold in whipped topping.

Pour into an oiled 13 x 9 x 2-inch pan or 8 1/2-cup mold. Chill until firm. Serve the mold or individual squares. Yields 12 to 16 servings.
