  • sugar - 2 c
  • butter - 1/2 lb
  • eggs, separated - 3 item
  • nutmeg - 1 tsp
  • can coconut - 1 item
  • sweet potatoes, mashed - 4 c

How to make sweet potato pie:

Bake 6 sweet potatoes. Peel and mash while warm. Cream butter and sugar well. Add eggs, one yolk at a time. Beat well. Add mashed potatoes, coconut and nutmeg. Fold in stiffly beaten egg whites. Mix well, but stir lightly. Put into unbaked pie shell and bake at 375° for about 40 minutes.
