  • sugar - 2/3 c
  • vanilla - 1/2 tsp
  • salt - 1/2 tsp
  • nutmeg - 1/2 tsp
  • butter or margarine, melted - 2 Tbsp
  • lemon juice - 2 Tbsp
  • allspice - 1/2 tsp
  • egg, beaten - 1 item
  • cooked, mashed sweet potatoes
  • Egg Beaters - 1/2 c
  • pastry for 1 9-inch pie shell
  • grated lemon rind fine grate - 1 tsp
  • reduced-fat evaporated milk - 1 c

How to make sweet potato pie:

Preheat oven to 450°. Roll pie crust. Line pan; prick shell on bottom and sides with fork. Bake 10 minutes. Remove from oven and reduce heat to 375°.

Mix together sweet potatoes and sugar. Add melted butter or margarine, spices, vanilla, salt and lemon juice with rind. Mix well. Gradually add Egg Beaters, egg and evaporated milk. Mix until smooth.

Coat bottom of pie crust lightly with beaten egg white. Pour mixture into partially baked shell. Bake pie at 375° for 35 to 40 minutes or until knife inserted in center comes out clean. Serve with whipped cream or low-fat Cool Whip, garnished with thin, curled strips of lemon rind.
