Ingredients/Components

  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • chopped pecans - 1 c
  • salt - 1/4 tsp
  • flour - 3 c
  • soda - 1 tsp
  • baking powder - 2 tsp
  • cooking oil - 1 c
  • can crushed pineapple with juice - 1 lb
  • grated raw sweet potatoes - 2 c

How to make sweet potato cake:

Sift dry ingredients and place in mixing bowl. Add cooking oil, vanilla and can of pineapple. Mix well. Add eggs, mixing well after each addition. Add grated sweet potatoes and pecans. Stir well. Pour in tube pan. Bake at 350° for about 1 1/4 hours. Test with toothpick.
