  • sugar - 2 c
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • milk - 1/2 c
  • eggs, separated - 4 item
  • nutmeg - 1 tsp
  • oil
  • nuts - 1 c
  • self-rising flour
  • hot water - 4 Tbsp
  • Beat until smooth
  • can sweet potatoes I use some of the liquid - 1 item

How to make sweet potato cake:

Combine oil and sugar. Beat until smooth. Add egg yolks and beat well; add hot water, then dry ingredients. Then add potatoes, nuts and vanilla. Beat egg whites until stiff. Fold into mixture. Bake at 350° in a 9 x 13-inch pan.Icing:2 c. xxxx sugar1/2 c. milk Mix well. (May need more milk.) Pour over warm cake.
