  • sugar - 2 c
  • chopped pecans - 2 c
  • vanilla extract - 1 tsp
  • salt - 1/2 tsp
  • eggs, separated - 4 item
  • cocoa - 2 Tbsp
  • buttermilk - 1 c
  • baking soda - 1 tsp
  • all-purpose flour - 2 c
  • butter or margarine, softened - 2/3 c
  • raisins
  • mashed, cooked sweet potatoes - 1 c
  • each: ground allspice, cinnamon, cloves and nutmeg - 1 tsp

How to make sweet potato cake:

Cream butter; gradually add sugar, beating well. Add egg yolks, one at a time. Add sweet potatoes to mixture, mixing well. Combine flour and next 7 ingredients; add to creamed mixture alternately with buttermilk. Mix after each addition. Stir in vanilla, raisins and pecans. Beat egg whites (room temperature) until stiff peaks form. Fold into batter. Pour batter into a greased and floured 10-inch tube pan. Bake at 325° for 1 hour and 25 minutes. Cool in pan 10 minutes. Remove; cool completely. Sprinkle with 10x sugar.
